  • Tasting Story: From Burgundy’s rising star Julien Altaber. Ecume (“foam”) is a pét-nat made from Chardonnay, showing notes of citrus, green apple, and saline minerals. It’s clean and lightly sparkling, more elegant than rustic — a pét-nat with Burgundian poise. A wine for those who want bubbles without formality.
