From a small 2-hectare parcel perched on the heights of Beaune, the 2023 Clos des Renardes reveals a quieter, more lifted side of Pinot Noir. Set at the edge of the forest — à l’orée des bois — this site brings a natural freshness that sets it apart from the broader appellation.
There’s a clarity here. Red fruit carried by fine acidity, a gentle structure, and a sense of air that comes from both altitude and restraint in the cellar. Nothing feels forced. It’s a wine shaped as much by where it comes from as by what is deliberately left untouched.
Fanny Sabre works with precision and patience, allowing the fruit to speak without excess extraction or heavy influence. The result is a Pinot Noir that feels composed, detailed, and quietly expressive — a true reflection of this atypical Beaune climat.
The Producer
Fanny Sabre is part of a generation reshaping Burgundy through restraint rather than intervention. Based in Pommard, she took over her family domaine and deepened her approach under the mentorship of Philippe Pacalet, one of the region’s key figures in natural winemaking.
Her philosophy is simple but disciplined: work cleanly, intervene minimally, and trust the vineyard. Fermentations are carried out with native yeasts, élevage is gentle, and the aim is always the same — to let each site reveal itself without distortion.
Her wines don’t chase power. They hold tension, detail, and a sense of place that only comes when nothing unnecessary is added.
