Vincent Couche is a true craftsman of the Aube, farming 13 hectares of biodynamic vineyards with a meticulousness that feels as intentional as a master carpenter’s hand-cut joints. Since 2008, he has followed the celestial cycles and used homeopathic preparations to ensure his soils are "living" and honest, making him one of the few producers in Champagne to hold both Demeter and Ecocert certifications.

The 'Elegance' cuvée is a precise and raw expression of his unique terroir, predominantly Pinot Noir with a touch of Chardonnay, grown on a mix of Kimmeridgian marl and Portlandian limestone.

This wine is a multi-vintage blend that utilizes a high proportion of reserve wines aged in oak vats, providing a structural depth and "built" integrity that is rare in non-vintage blends. Fermented with indigenous yeasts and bottled as a Brut Nature (zero dosage), it is a transparent and soulful Champagne that delivers notes of crisp red apple, toasted brioche, and a distinct chalky mineral energy that vibrates through the palate.

Serving Tip Serve at 8–10°C. For a Champagne of this complexity, avoid using narrow "flutes." Instead, serve it in a standard wine glass or a wide tulip glass to allow the complex aromas of brioche and orchard fruit to fully unfurl.
